I'm actually trying to do the same thing. I want to take VHS stuff and keep them electronic on my media server. Stream to whatever system on my network that I want. I can't seem to get the quality either.
I've tried encoding with Windows Media encoder, but that seems to take some serious horsepower, even for my P4 2.8 system.
I've gotten good quality tv episodes from BT, I'm just wondering how they do that!
I am getting an AIW 8500, maybe that'll work better than my capture card?
