You can delete all but the most recent restore point. I'm on a Windows 2000 PC right now but if I remember correctly it's :
Disk Cleanup/Advanced/Delete all but most recent restore point.

| start>all programs accessories>system tools>disk cleanup>then select the disk you want to cleanup then click ok. Then click the more options tab at the top.
