I'm not sure this is possible, but can you set a non default route for 10.1.1.0, but have 10.1.1.5 use the default gateway/route? If so, how would you do that in Windows XP?

Yes,

Route add 10.1.1.0 mask 255.255.255.0 10.1.1.1
route add 10.1.1.5 mask 255.255.255.255 10.1.1.2

If XP follos the rules correctly this will work. If it doesn't change the metrics also.
