For example:

Simply put, the antenna under test is measured against a reference antenna, and that antenna parameters are determined from that.
Using your Cantenna for an example, they put that on a rotating platform at a distance and apply a constant signal to the reference antenna. Then they rotate the platform slowly and record what the received signal levels are at your Cantenna. This yields the antenna plots that are usually available for every manufacturer's antennas.
