Because it does much more than just charging and data transfer. It also carries audio, video and control signals. The 30 pin connector also carried Firewire but that was phased out, one of the reasons it can be reduced to 19 pins.

Everything I've seen requires a dongle, still. I know audio can come from USB, as there are USB docks for other phones already. A microUSB to HDMI (MHL adapter) exists, depends on the phone if it's supported.

It may be possible now but it wasn't 10 years ago when the 30 pin connector was created. Going to 19 pins Apple can maintain compatibility with the thousands of accessories out there with an adapter. And yes they can make money selling proprietary cables and adapters.

As for dongles, either you buy an HDMI adapter for iPhone/iPad or you buy an MHL-HDMI or mini-HDMI adapter for Android.

There's no reason to buy an adapter to go from one proprietary plug (19 pins) to another proprietary plug (30 pins).

Maybe so, however the 19 pin connector is just the 30 pin connector with the unused pins removed. It is trivial to create an adapter for it as the pins correspond one-to-one. Not so trivial going from 30 pin to micro-USB.

How do you propose getting the analog audio pins plus separate data pins out of a MicroUSB port? USB can carry audio data, but it's in digital form. So making an adapter would certainly not be trivial without some sort of complex interface.

Exactly. Switching to USB only would only increase the actual cost of adapters and add-ons while limiting their functionality. Everything would have to go through the normal USB data path instead of using dedicated, custom circuitry (video out for video, audio out for audio, etc). Just to create a simple dock connector to audio adapter, it would now need a USB controller, decoder, digital to analog converter, etc. Instead of just a single pair of wires carrying audio out.

Simple serial-based device would need to go through the entire USB conversion just to send/receive commands. Not to mention that developers would then be relying on Apple to provide new APIs for accessing USB devices (which probably won't be happening).

Not sure if someone said this, but Apple so far, has sold a few gazillion iDevices. If they move to an industry standard connector, they'll share (lose) the sales of cables (a VERY high margin product) with others. If they design a proprietary product, they'll make a gazillion dollars in sales. Absent competition (at least initially) they can offer it at a high mark up.
Yes, I know, making profits has now become a heinous act, up there with peddling crack to children, but they're still a private company that owes their shareholders the obligation of growth.

Plus, what if the industry standard (or third party connector) causes problem on the iDevice? Whose reputation will suffer?
(again, I apologize if this was already discussed)

Eh, they only did it because of the reason I gave above.

Same with the reason why they didn't release that Apple Tv. They couldn't find a patent so that they could sue all of the makers of rectangle boxes to get them all removed from the marketplace.
