could be that the wifi router in the plane is location aware (ties into the plane's gps) and pushes out time zone updates via NTP. if the GPS and cell radios are off, this is pretty much the only answer.

sure, a phone can use a wifi signal to determine location but that is because it assumes that the wifi router is FIXED, not IN MOTION.
