[Food] 4th o' July eats?

What's everyone gonna cook for the 4th celebration?

Here at the rusdi house I will be grillin' steak & chicken fajitas, with some grilled onions & peppers. Also roasted corn-on-the-cob with a little garlic, lime butter.

Maybe some baked beans and 'tater salad. For desert, a big slice o' cantaloupe melon.

Drink will be cold beer for the guys, and a pitcher o' Sangria with orange, lime, and lemon slices for the ladies. Youngsters get juice.

We're marinating a chicken in Sazon (stuffing some cilantro and other goodies in the cavity) to rotisserie tomorrow, but it's not for a party or anything.

My husband brought home some Woodchuck cider that is really pretty tasty. We're spending most of this weekend in the garden, launching a full-scale attack on the weeds. WHEEEEEE

We are having burgers, hot dogs, baked beans and a pasta salad tomorrow. Tonight is fresh green beans, new potatoes and BBQ'd chicken. Oh, I alnost forgot watermelon

B-B-Q'n ribs & burgers cause it's quicker than doing a brisket, what with the temp around 104° tomorrow.
Baked beans, corn on the cob, and twice baked potatoes.

They had to run Rebekah into the hospital yesterday but it turns out that the problem was merely a viral infection so all is well and we are going over to Dan's place for hotdogs, Brats, Potato salad and what ever else we all can dig up for the evening.

Ohhhhh it's a sad state of affairs for Mr. Pete on this 4th...

Anne has to work all day and evening (things are desperate in retail-land!), and I have been doing an uber-cleaning of the hacienda, to include too many domestic chores to even write down!

Worst of all...on the menu?......Lefty - Overs Easy (as in "microwavable")

Who the heck goes shopping on the 4th O' July anyways???

Oh well, all you Helix folks eating well out there...take a big bite for PeteC2! Ahhh, I feel better already!

Here's the rib-eyes almost done. The best part was that they were on sale @ $5.99/lb.! Finished up with a fruit salad of kiwis, pineapple & strawberries.

Grilled Salmon, marinated in lime juice, olive oil, salt and chipotle chili seasoning

a salad of mushrooms, radishes, cucumber, red onion and an avocado, with the same marinade for a dressing

Was yummy

Just burgers, hot dogs and portobellas (for the vegetarian lightweights) on the grill. Tomorrow is the big day here, two birthdays and the fourth rolled in to one shindig. I've been smoking a huge pork shoulder for pulled pork and will also smoke some spare ribs. Others have provided corn on the cob, strawberries, a couple of key lime pies, pasta salads and more. Fun times, life is good.
