Even the free versions of SSM and ProSecurity can do this. ProcessGuard is probably easier to set up though, imo.

There are other HIPS programs that do this as well. Also most good HIPS will prevent the virus from starting in the first place.

That why it's smart to run one of these HIPS programs along with your AV.
